Bacon, Egg & Cheese Breakfast Pizza!!
I have this recipe on one of those little recipe cards in the handwriting of the home cook who passed it along to me. I love these little recipe cards; they remind me of the time and place I first had the food, the friend or family member who first prepared it for me. Blogging about food seems like a digital version of these recipe cards, kind of the way e-mail is a digital version of letter writing. The new technologies, in both cases, share benefits and drawbacks: it's easier to spread the information more quickly and frequently and to more people, but something tactile is lost.
We ate this breakfast pizza in the morning before we headed home from a family reunion. Ahead of us was a 5-plus hour car trip with two small children; I credit the success of the journey in part to the food we had in our bellies before we left. I think the recipe is open to a lot of variation: add some sauteed veggies, some bacon or ham. Some of us had salsa on top.
Mix 3 eggs with 1/4 cup milk. Press 1 package crescent roll dough into a pizza pan to form a crust. Scatter 12 ounces browned and drained sausage over the crust along with 2 cups thawed frozen hash browns. Pour the egg mixture over the top and sprinkle with 1 cup grated cheese. Bake in a 400-degree oven for 25 minutes or until the bottom crust is browned.
